Noodles with Sautéed Chicken, Bell Peppers, Garlic and Ginger!!!


Ingredients:

For the Chicken:

2 lbs. of boneless chicken breast sliced
1 tsp. garlic powder
¾ tsp. salt
1 tsp. black pepper
Vegetable oil

Place chicken slices in a bowl. Add the spices to the chicken and drizzle the vegetable oil over the chicken. Cover the bowl and place in the refrigerator until ready to use.

Heat a large frying pan and sauté the chicken until slightly golden on each side and the chicken is cooked. Set the chicken aside while preparing the veggies.

For the Vegetables:

2 bell peppers – sliced
1 Jalapeño – sliced thin with seeds
1 large Spanish onion – sliced
3 inch piece of ginger – sliced thin
6 cloves of garlic – chopped
1 bunch of scallions – sliced thin
1 lb. of your favorite noodles

Heat a large frying pan with a drizzle of vegetable oil and place all of the veggies in the pan. Sauté until the onion is soft and the peppers are slightly soft. Do not overcook your veggies.

While the veggies are sautéing prepare the noodles. Drain the noodles and set aside until the veggies are ready.


Sweet and Spicy Sauce for this Dish:

1 tablespoon of orange marmalade
1 tablespoon of apricot preserves
2 tablespoons vinegar
1 tablespoon soy sauce
1 tablespoon your favorite hot sauce
1 tsp. Worcestershire sauce
1 tsp. sugar
1 tsp. salt


Combine all of the ingredients for the sauce and stir until smooth.

Remember you are the boss and may adjust the sauce to your liking.

Place the chicken in with the veggies and add the noodles. Pour in the sauce and toss.

This is a nice dish for any night of the week and something a little different.

Italian Style -Golden Chicken Breast Nuggets!!!


Ingredients:

3 lbs. chicken breast – cut into bite size nuggets
2 cups - Panko breading
2 cups flour
4 eggs – beaten
Vegetable oil – for frying

Seasonings for the Panko:

½ tsp of each – or to your liking: Garlic powder, salt, black pepper, dried oregano and paprika.

Preparation:

Dip the chicken pieces first in the flour, then the egg wash and finally in the seasoned Panko.

Heat a large frying pan with about ½ inch of vegetable oil and place the prepared chicken pieces in the hot oil to fry. When the pieces are golden carefully turn them to finish cooking.

Place the cooked pieces on a paper towel to drain.

Garnish with lemon and Italian parsley.

These are a delicious meal or appetizer.

Boneless Chicken Breast with Fresh Tomatoes and Sage!!

Ingredients:


For the chicken:


3 lbs. boneless chicken breast – sliced thin
Dashes of paprika
Dashes of sea salt
Dashes of fresh ground black pepper
Olive oil – for drizzling


For the Sauce:


4 vine ripe tomatoes – cut up
5 cloves of garlic – chopped
Handful of fresh sage
Sprigs of fresh oregano – or dashes of dried
Zest of 1 lemon
Juice of l lemon
Grated Romano cheese


In a bowl combine the chicken slices, paprika, sea salt and fresh ground black pepper. Drizzle olive oil over the chicken and toss.


In a separate bowl combine the chopped tomatoes, lemon zest, chopped garlic, fresh sage and fresh oregano. Set aside while sautéing the chicken.


Heat a large frying pan with a drizzle of olive oil and place the chicken slices and sauté. Set the chicken in a platter and set aside.


When finished sautéing the chicken place the all the ingredients the bowl with the tomatoes in the frying pan and sauté until the tomatoes are soft and the sauce is fragrant. Season the sauce to taste with salt and pepper.


Place the chicken back in the pan with the tomatoes and toss. Place on a serving platter. Drizzle the top with a little olive oil, squeeze the zested lemon over the top and grate fresh Romano cheese.


This dish is easy, quick and delicious for any night of the week.
