Quick and Easy Sausage and Peppers!!!


Ingredients:

12 Sausages links
1 large onion – sliced
3 large bell peppers – sliced
5 cloves garlic – chopped
Olive oil
Your favorite bread

Heat a large frying pan with a drizzle of olive oil. Add the sausage links and let cook.

Heat a griddle and place the sliced onion and peppers on the griddle to char slightly.

Add the peppers and onions to the frying pan with the sausage. Add the chopped garlic and continue to sauté until the sausage is completely cooked.

Serve with nice Italian bread or your favorite bread.

This is a delicious and easy way to cook up dinner.

Potato Leek Soup!!!


Ingredients:

5 lbs. potatoes – peeled and sliced
2 large leeks – cleaned and chopped
15 cloves of garlic – chopped
1 large onion – sliced
Healthy handful of Italian parsley - chopped
12 cups of chicken broth
Juice of 1 lemon
Dashes of salt
Dashes of black pepper
Olive oil

Heat a large soup pot with a drizzle of olive oil. Add the sliced potatoes, leeks, onions, and garlic. Sauté until the onions are soft. Add the parsley and chicken broth and simmer on low until the potatoes are soft. Add the salt and pepper.

Using a potato masher gently and carefully mash the soup.

Just before serving add the lemon juice and stir.

This soup is hearty and delicious.

Boneless Sirloin Steak with Onions & Tomatoes!!!

Ingredients:

2 ½ lb. boneless sirloin steak

Onions & Tomatoes:

1 Spanish onion – sliced
½ red onion – sliced
5 cloves of garlic – chopped
14.5 oz. can of stewed tomatoes
1 Jalapeño – chopped with seed
Olive oil for drizzling

Heat a griddle. Rub steak with LivingtheGourmet Signature Spice Rub on both sides. Place steak on hot griddle and flip only once. You can tell when the steak is the way you like it by the firmness when you gently press down on it. The firmer the steak is the more well-done the steak. Do Not Slice into the steak to test if it is done, since that will let all of the delicious juices run from the steak.

For the Onions:

Heat a large frying pan with a drizzle of olive oil. Add the onions, garlic and Jalapeño and sauté. When the onions are slightly golden add the tomato and continue to simmer on low.

Top the grilled steak with the onions and serve.

This is a delicious and quick dinner served with a beautiful side salad.

Boneless Sirloin Steak with Onions & Tomatoes!!!

Fried Chicken Strips with Onion Salsa!!

Ingredients:


Chicken Strips:


2 ½ lbs. boneless chicken breast – sliced
1 cup flour
1 cup milk
1 cup cornmeal – plus 1 tablespoon brown sugar
2 cloves of garlic - sliced
Vegetable oil for frying


Dip chicken strips first in the flour then the milk and finally in the cornmeal.
Heat a large frying pan with about 1 inch of vegetable oil plus the garlic slices and carefully place the chicken in the pan. Do Not Overcrowd the pan. When the chicken is a beautiful golden color, remove and place on a platter lined with paper towels.


For the Onion Salsa:


8 oz. of your favorite salsa
1 large red onion – sliced
3 cloves of garlic – chopped
Healthy handful of Italian parsley – chopped
2 tablespoons of balsamic vinegar
2 tablespoons of honey
Olive oil for drizzling


Heat a frying pan with a drizzle of olive oil and add the onion and garlic. Let the onion sauté until slightly soft. Add the parsley and salsa. Continue to sauté on low.


Combine the honey and vinegar in a small bowl and then add to the pan and toss.


Plate the chicken strips on a platter and top with the onion salsa.


This dish is easy and delicious and will please your taste for fun!!
