Broccoli, Grilled Pork Strips and Spaghetti!!!


Ingredients:

2 lbs of boneless pork loin - cut into strips
1 head of broccoli – cut into spears
5 cloves of garlic – chopped
1 box of your favorite spaghetti

Marinade for the Pork:

Juice of 1 lemon
1 tablespoon of vinegar
1 tablespoon of sugar
½ tsp. of salt
½ tsp. of black pepper
½ tsp. of ground cumin

Place pork pieces in the marinade and refrigerate for half an hour or more.

Heat a griddle with a drizzle of olive oil and place the pork pieces on the hot griddle to grill.

While grilling the pork prepare the spaghetti as directed. Place the broccoli in the spaghetti water about 3-4 minutes before the spaghetti is done.

Drain the broccoli and spaghetti and plate; top with the grilled pork.

Heat a small frying pan with a drizzle of olive oil. Add the chopped garlic, a few dashes of red pepper flakes. When the garlic is fragrant and slightly golden pour this over the plated broccoli, spaghetti and pork. Squeeze a ¼ of lemon over the top and toss.

This dish is easy and delicious.

Girard's Epicurean Expert

I am very pleased to bring all of you a ‘sneak-taste’ of Girard’s new line of gourmet salad dressings, all of which are tastier than ever! With each variety being as healthy as it is delicious, these dressings are certain to become a part of your culinary essentials.

Here are four easy and delicious recipe’s I put together using the Girard’s salad dressings:

Girard’s Fried Boneless Pork Cutlets with Grilled Veggies & Apricots!!

Ingredients:

2 lbs. bones pork loin – sliced thin
2 cups flour
3 eggs plus a splash of water – beaten
Vegetable oil for frying

Veggies:

1 quart button mushrooms – sliced
1 Jalapeño – grilled
2 bunches of scallions – split
5 cloves of garlic – crushed
1 cup of dried apricots
Handful of fresh Italian parsley - chopped
Olive oil for drizzling

Girard’s White Balsamic Vinaigrette Sauce:

¾ cup Girard’s White Balsamic Vinaigrette
2 tablespoons honey
1 tablespoon butter

For the Pork:

Dip the sliced pork first in the flour then in the egg and back in the flour.

Heat a large frying pan with the vegetable oil, about ½ inch, and carefully place the prepared pork in the hot oil. You should hear it sizzle, if you don’t the oil is not ready.

Turn the pork only once so that the coating does not fall apart.

Veggies:

While the pork is cooking, heat a griddle and place the scallions and Jalapeño on to grill. Drizzle with a little olive oil and grill until slightly charred. Next, place the mushrooms, apricots and garlic on the griddle, drizzle a little olive oil over them and grill until slightly charred. When the Jalapeño is slightly charred slice it with seeds.

Place the scallions on a serving platter first and top with the pork. Place the mushrooms, apricots, sliced Jalapeño and garlic over the pork and sprinkle the chopped parsley for garnish.

Girard’s White Balsamic Vinaigrette Sauce:

In a small frying pan place the tablespoon of butter and melt. Add the Girard’s White Balsamic Vinaigrette and heat to a slight bubble add the honey and stir.

Pour this over the pork with veggies and serve.

This dish is both delicious and quite beautiful to present to your table.

Girard’s Champagne Dressing with Garden Salad!

Ingredients:

1 head red leaf lettuce
½ red onion - sliced
1 cup grape tomatoes
1 cup black olives
½ cup sliced baby carrots - sliced
½ red bell pepper – sliced
2 Kirby cucumbers – sliced

Girard’s Greek Feta Salad Dressing & Pork Souvlaki!!

Ingredients:

Salad:

1 head of Romaine lettuce
½ cup of grape tomatoes
1 red onion – sliced thin
½ cup black olives
2 Kirby cucumbers – sliced

Clean the Romaine and leave whole and place on serving plate with the onion, olives, cucumbers and tomatoes.

Pork Rub:

1 tsp. brown sugar
1 tsp. chili powder
½ tsp. paprika
Juice of 1 lime
4 cloves of garlic – crushed & chopped

Combine all of the ingredients for the pork rub in a small bowl and mix well. Place the pork in a medium sized bowl and mix the rub with the pork.

Heat a griddle and place the pork on the hot griddle and grill.

Drizzle the Girard’s Greek Salad Dressings over the Romaine lettuce and place the grilled Pork on top and serve.

This is a delicious and satisfying dish for all to enjoy.

Italian Style Chicken & Girard’s Olde Venice Italian Salad Dressing!!

Ingredients:

1 quartered chicken
½ cup Girard’s Olde Venice Italian Salad Dressing
¼ cup red wine
Dashes of fresh ground black pepper
Dashes of dried oregano
Grated fresh Romano cheese
Handful of fresh Italian parsley - chopped
Handful of fresh basil – chopped
Drizzle of olive oil

Preheat the Oven 350 degrees:

Place chicken parts in a baking pan. Combine the Girard’s Olde Venice Salad Dressing with the ¼ cup red wine and pour over the chicken parts. Sprinkle the chicken with dashes of fresh ground black pepper and dashes of dried oregano. Grate fresh Romano cheese over the chicken and bake for about 45 minutes or until the juices run clear.

Plate the chicken and grate a little more fresh Romano cheese over the top and garnish with the fresh parsley and basil.

This chicken is easy to prepare and tastes delicious.

Italian Style Chicken & Girard’s Olde Venice Italian Salad Dressing!!

Stuffed Pork Loin Rib End Roast!!

Ingredients:


5 lb. pork loin rib end roast


Stuffing:


1 bunch of fresh Italian parsley – chopped
6 cloves of garlic – chopped
Zest of ½ lemon
Juice of 1 lemon
¼ cup of grated Romano cheese
2 tablespoons of honey
3 vine ripe tomatoes – diced
Dashes of fresh ground black pepper
Olive oil


Rub for the top of the pork:


Drizzle of olive oil
Dashes of dried oregano
Dashes of paprika


Preheat Oven 350 degrees:


Combine all of the ingredients for the stuffing and mix.


Find the seam in the pork roast and make a pocket for the stuffing. Fill the pocket with the stuffing.


Rub the top of the pork with the olive oil, paprika and oregano.


Place in a baking dish and bake for about 20 minutes per pound.


This is very delicious treat for the family.

Asian Style Ribs with Oven Fried Potatoes!!

Inspired by: James Beard’s American Cookery


Ingredients:


4 lbs. pork ribs – separated


Marinade:


2/3 cup wine
2/3 cup soy sauce
2/3 cup orange juice
3 inch piece of fresh ginger – grated
6 cloves of garlic – sliced
Dashes of sea salt
Dashes of fresh ground black pepper
Drizzles of olive oil


In a large bowl combine all of the ingredients for the marinade and add the ribs. Place in the refrigerator for a few hours.


Preheat Oven 350 degrees:


Place the ribs in a baking dish and pour the marinade over them. Place in the oven for about 2 hours or until the marinade has absorbed into the ribs.


Remove from oven and sprinkle a teaspoon of sugar over the ribs for a nice glaze.


This is a delicious rib recipe.

The Oven Fried Potatoes


Ingredients:


5 lb. bag of potatoes – peeled and sliced
Dashes of sea salt
Dashes of fresh ground black pepper
Dashes of paprika
Dashes of chili powder
Dashes of garlic powder
Drizzles of olive oil


Preheat Oven 350 degrees:


Peel and rinse the potatoes. Pat dry, slice and place the potatoes in a bowl. Drizzle olive oil over the potatoes, add the seasonings and toss. Place the potatoes in a baking pan.


Bake for about 1 hour or until golden.


These potatoes will bring a welcome addition to any meal.

Asian Style Ribs with Oven Fried Potatoes!!

Peaches & Pork!!

Ingredients:


3 lb. boneless pork loin – sliced thin


Pork Marinade:


1 bunch of fresh cilantro – chopped
5 cloves of garlic – chopped
Dashes of cumin
Dashes of paprika
Dashes of sea salt
Dashes of fresh ground black pepper
Juice of 2 limes
2 tablespoons wine
1 tablespoon sugar
2 vines ripe tomatoes – diced
A few drizzles of olive oil


Peach Marinade:


About 10 peaches – skinned and sliced
1 cup of wine
½ cup balsamic vinegar
Healthy bunch of fresh basil
1 red onion – sliced
2 inch piece of fresh ginger – grated
1 tablespoon of Tabasco
1 tablespoon of brown sugar
A few drizzles of olive oil
1 tablespoon of unsalted butter


Combine all of the ingredients for the pork marinade in a large bowl. Place the sliced pork in the bowl for at least 1 hour.


Heat a griddle and place the sliced pork on a hot griddle. Let the pork become golden on one side and the turn to finish grilling.


Combine all of the ingredients for the peaches in a bowl. Heat a large frying pan and place the peach mixture in the frying pan. Let simmer until the onions become slightly soft. Do Not Over Cook!!


Place the pork in a platter and garnish with the peaches.


This is a pretty presentation and delicious too!

Sliced Pork with Warm Mango Salsa!

Ingredients:


3 lb. boneless pork loin – sliced thin
5 cloves of garlic - crushed & chopped
Juice of 1 lime
Zest of 1 lime
Healthy handful of fresh Italian parsley - chopped
Dashes of sea salt
Dashes of fresh ground black pepper
Dashes of sea salt
Dashes of fresh ground black pepper
Drizzle of olive oil


Warm Mango Salsa:


2 mangos – cut up
1 bunch of scallions – chopped
1 medium sweet onion - chopped
Healthy handful of cilantro – chopped
5 cloves of garlic – chopped
1 pint of grape tomatoes – halved
1 Jalapeño – sliced
1 tablespoon of brown sugar
Dashes of ground cumin
Dashes of ground cinnamon
Dashes of salt
Dashes of fresh ground black pepper
Drizzle of olive oil


Slice the pork and combine all of the ingredients in a a large bowl and let sit for ½ hour to an hour in the refrigerator.


Combine all of the ingredients for the salsa in a bowl and let sit while grilling the pork.


Heat a griddle. Place the pork on the hot griddle and let the pork become a beautiful golden color on both sides. Set in a platter.


Heat a frying pan with a drizzle of olive oil. Place the salsa in the pan and toss until the onion is almost clear. Remove from the heat and place in a serving bowl.


This is a great combination of flavors and quick to whip up.
