Quick and Easy Sausage and Peppers!!!


Ingredients:

12 Sausages links
1 large onion – sliced
3 large bell peppers – sliced
5 cloves garlic – chopped
Olive oil
Your favorite bread

Heat a large frying pan with a drizzle of olive oil. Add the sausage links and let cook.

Heat a griddle and place the sliced onion and peppers on the griddle to char slightly.

Add the peppers and onions to the frying pan with the sausage. Add the chopped garlic and continue to sauté until the sausage is completely cooked.

Serve with nice Italian bread or your favorite bread.

This is a delicious and easy way to cook up dinner.

Salsa Macaroni Bake!!!


Ingredients:

For the Sauce:

2 cups salsa
1 jalapeño – chopped
1 red onion – sliced
5 cloves garlic – chopped
28 oz. can crushed tomatoes
1 quart button mushrooms – sliced
Healthy handful of fresh Italian parsley
4 sweet or hot sausage links – chopped
Drizzle of olive oil
1 lb. of your favorite macaroni
1 cup tortilla chips – crushed

Seasonings for the sauce:

Dashes of fresh ground black pepper
Dashes of sea salt
Dashes of red pepper flakes
Dashes of dried oregano
Dashes of ground cumin

Cheeses:

16 oz. container of sour cream
1 cup cheddar cheese – shredded
1 cup mozzarella – shredded
Grated Romano cheese

Preheat Oven 350 degrees:

Heat a griddle and place the sliced mushrooms to grill with a drizzle of olive oil, while preparing the sauce.

Place the sausage links in the oven to bake while preparing the sauce. When the sausage is cooked, slice.

Heat a sauce pan with a few drizzles of olive oil. Add the onion, jalapeño and garlic; sauté until onion is softened and add the salsa and simmer on low. Add the grilled mushrooms, crushed tomatoes, parsley and sausage. Add the seasonings and simmer on low.

Prepare the macaroni as directed.

When the macaroni is cooked, drizzle a little olive oil at the bottom of a baking dish. Add the cooked macaroni and toss with the olive oil. Add the sour cream, crushed tortilla chips, mozzarella, cheddar cheese and toss. Add the sauce and toss gently again. Top the macaroni with sauce, mozzarella and more grated Romano cheese.

Bake for 20-25 minutes.

This is a great twist on traditional baked macaroni.

Fresh Garden Sauce Pizza with Sausage!!!


Ingredients:

Fresh Pizza dough – (2)
16 oz. shredded mozzarella
16 oz - Ricotta cheese
Romano cheese for grating
4 Sweet Sausages – grilled and shredded
Cornmeal for dusting
Olive oil

For the Sauce:

2 quarts of fresh cherry tomatoes – halved
5 cloves of garlic – chopped
1 red onion - sliced
Handful of fresh basil – chopped
Handful of fresh sage – chopped
Zest of 1 lemon
Dashes of sea salt
Dashes of fresh ground black pepper
Dashes of red pepper flakes
Dashes of dried oregano
Olive oil

Heat a large frying pan with a drizzle of olive oil. Add the garlic, onions and lemon zest. Sauté until the onion is soft. Add the tomatoes and seasonings. Cook down for about 10 minutes on a low simmer.

Turn off heat and set aside.

Prepare the Dough:

Preheat Oven 350 degrees:

Work the dough with your fists. Do not roll the dough out. Work the dough to fit the pizza pans. Do no make the dough too thin, or the sauce will seep through.

Dust the pizza pans with cornmeal. Place the dough on the prepared pan.

Spoon the ricotta on the dough first.

Next, with a slotted spoon, place the tomato sauce on the ricotta. Top the sauce with the shredded with the sausage. Place the shredded mozzarella and grated Romano on top of the sausage and finish off with a drizzle of olive oil.

Place in the oven for about 25 minutes or until the crust is golden.

This is a delicious and hearty pizza!
