Baked Macaroni Invention!!!


Ingredients:

1 pint of grape tomatoes
1 ½ cups whole milk
1 ½ cups sharp cheddar cheese – shredded
3 tablespoons butter
1 box of your favorite macaroni

Prepare the macaroni as directed.

Place the tomatoes in a food processor and give a few good chops.

Place the macaroni in a baking dish and add the butter, cheese, milk and chopped tomatoes.

Place in Food Processor the following:

Wedge of Romano cheese – about 2 inches
1 tsp. capers – plus tablespoon of caper marinade
6 oz. can achiovies
3 sun-dried tomatoes
½ cup of Italian style bread crumbs
Healthy handful of parsley
1 tablespoon vinegar
½ Jalapeño – with seeds
Drizzle of olive oil

Combine the above ingredients until it is fine and add to the baking dish and toss. Top with more shredded cheddar cheese.

Preheat Oven 350 degrees.  Bake for 20-25 minutes.

This is a dish that made use of the leftover stuffing from the stuffed peppers. It is delicious and will be a new addition to the many versions of baked macaroni!

Baked Sweet & Spicy Red Pepper Sauce with Crushed Tomatoes!!



Ingredients:

5 long Italian peppers
28 oz. can crushed tomatoes
2 Jalapeño peppers
8 cloves of garlic – chopped
2 tablespoons of raisins
¼ cup honey
¼ cup vinegar
Handful of fresh basil – chopped
Dashes of red pepper flakes
Dashes of fresh ground black pepper
Dashes of sea salt
Dashes of dried oregano
Olive oil

Heat a griddle and grill the peppers whole until they are slightly charred. Let the peppers cool and then slice them. Slice the Jalapeño’s with the seeds.

Preheat the oven 350 degrees:

Place the sliced peppers, garlic, crushed tomatoes, raisins, basil, honey mixed with the vinegar and all of the spices. Drizzle olive oil over the sauce and place in the oven for 30-35 minutes.

Place this sauce over rice or your favorite spaghetti or macaroni. It will definitely be something you will want to make again!!!

Fried Chicken Breast with Creamy Garlic Peanut Butter & Tomato Sauce!!!

Ingredients:

4 Chicken Breasts – with bone and skin
2 cups all-purpose flour
3 eggs plus a splash of water
Vegetable oil for frying
Chopped Italian parsley for garnish

Creamy Garlic Peanut Butter Sauce with Tomato:

2 vine ripe tomatoes – chopped
5 cloves garlic – chopped
1 tablespoon Worcestershire Sauce
1 tsp. Sesame oil
Drizzle of olive oil
Juice of 1 lime
2 tablespoons creamy peanut butter
1 tsp. brown sugar
½ cup chicken broth

For the chicken:

Dip chicken first in flour, then egg and then flour again.

Heat a large frying pan with vegetable oil, about ½ inch. Carefully place the chicken in the hot oil. Let the chicken cook fully on one side, turning only once and finish cooking on the other side.

For the peanut butter sauce:

Combine all of the ingredients for the peanut butter sauce, mix well. Heat a medium sized frying pan and place the sauce in to simmer on low until fully heated.

Plate the chicken and spoon the peanut butter sauce over top. Garnish with chopped fresh parsley.

This is a unique and delicious way to serve up fried chicken.

Grilled Chicken with Fresh Garden Tomatoes!!!



Ingredients:


2 ½ lbs. of boneless chicken breast – sliced
4 tablespoons of butter – softened
Dashes of salt
Dashes of fresh ground black pepper
Drizzle of Olive oil
Bunch of fresh basil
4 vine ripe tomatoes sliced
Fresh grated Romano cheese


In a bowl combine the sliced chicken and the butter, drizzle of olive oil and seasonings and toss.


Heat a large frying pan with a drizzle of olive oil and place the chicken breast in the heated pan to sauté.


Heat a griddle with a drizzle of olive oil and place the tomatoes on to grill. Add the fresh basil to crisp and top with the grilled tomatoes and basil.


This is easy, delicious and pretty.

Chinese Cabbage with Cannellini Beans & Tomatoes!!

Ingredients:


1 head of Chinese cabbage – sliced
4 cloves of garlic – chopped
1 bunch of cilantro – chopped
1 – 14.5 oz. can of stewed tomatoes
1 29 oz. can of cannellini beans - drained
1 Jalapeño – grilled & chopped
Olive oil – for drizzling
Dashes of sea salt
Dashes of fresh ground black pepper


Heat a sauce pot with a drizzle of olive oil and add the garlic and cabbage. Cover and let the cabbage cook down. Add the tomatoes, grilled Jalapeño and the cilantro and continue to simmer on low for another few minutes.


Drain the cannellini beans and add to the cabbage. Continue to simmer on low for a few minutes. Add the seasonings and another drizzle of olive oil.


This can be served as is or over rice or macaroni. It is a delicious and healthy dish!

Chinese Cabbage with Cannellini Beans & Tomatoes!!

Macaroni Bake!!



1 lb. favorite macaroni
Healthy handful of cilantro
Healthy handful of Italian parsley
4 vine ripe tomatoes – sliced
8 oz. feta cheese – crumbled
2 cups fresh Italian bread crumbs – made from hard Italian bread
6 cloves of garlic – crushed & chopped
Tablespoon of capers plus a tablespoon of caper juice
Zest of ½ lemon
Juice of ½ lemon
Dashes of paprika
Dashes of sea salt
Dashes of fresh ground black pepper
1 cup milk
1 cup sour cream
Grated Romano Cheese
Olive oil


Note: Fresh Italian bread crumbs may be made from slicing the Italian bread, rubbing it with fresh garlic clove, a drizzle of olive oil and grilling it to a golden crisp. Grate fresh Romano cheese on it and when it cools run it through the food processor.


Preheat Oven 300 degrees:


In a large bowl combine the cilantro, parsley, feta cheese, bread crumbs, zest of the lemon, lemon juice, capers plus caper juice, grated cheese and seasonings. Combine the sour cream and milk and add to the bowl and mix.


Prepare the macaroni as directed:


Drizzle a little olive oil at the bottom of a baking dish and place half of the macaroni. Pour the mixture over the macaroni and place half of the tomato slices on top. Place the rest of the macaroni, the rest of the tomatoes and grate Romano cheese over the top, along with a drizzle of olive oil.


Place in the oven for 20-25 minutes.


This is a wonderful side dish or main course.

Macaroni Bake!!

Boneless Chicken Breast with Fresh Tomatoes and Sage!!

Ingredients:


For the chicken:


3 lbs. boneless chicken breast – sliced thin
Dashes of paprika
Dashes of sea salt
Dashes of fresh ground black pepper
Olive oil – for drizzling


For the Sauce:


4 vine ripe tomatoes – cut up
5 cloves of garlic – chopped
Handful of fresh sage
Sprigs of fresh oregano – or dashes of dried
Zest of 1 lemon
Juice of l lemon
Grated Romano cheese


In a bowl combine the chicken slices, paprika, sea salt and fresh ground black pepper. Drizzle olive oil over the chicken and toss.


In a separate bowl combine the chopped tomatoes, lemon zest, chopped garlic, fresh sage and fresh oregano. Set aside while sautéing the chicken.


Heat a large frying pan with a drizzle of olive oil and place the chicken slices and sauté. Set the chicken in a platter and set aside.


When finished sautéing the chicken place the all the ingredients the bowl with the tomatoes in the frying pan and sauté until the tomatoes are soft and the sauce is fragrant. Season the sauce to taste with salt and pepper.


Place the chicken back in the pan with the tomatoes and toss. Place on a serving platter. Drizzle the top with a little olive oil, squeeze the zested lemon over the top and grate fresh Romano cheese.


This dish is easy, quick and delicious for any night of the week.
