Quick & Easy ~ Delicious Tomato Sauce with Meat!!!


Ingredients:

35 oz. can of Crushed Tomatoes
5 cloves of garlic – chopped
Large bunch of fresh basil – chopped
1 red onion – sliced
½ lb. ground beef
¼ cup of red wine
Dashes of sea salt
Dashes of fresh ground black pepper
Dashes of red pepper flakes
Dashes of Cajun spices
Olive Oil
Fresh Grated Romano Cheese
Box of your favorite macaroni or spaghetti

Heat a large frying pan with a drizzle of olive oil. Add the garlic, onion and fresh basil.
Sauté until the onion is clear. Add the ground beef and continue to sauté until the beef is cooked. Add the crushed tomatoes, wine and seasonings. Simmer on low while preparing the macaroni.

Drain the macaroni and plate with a drizzle of olive oil and fresh grating cheese.

This is delicious, easy and so very comforting.

Stuffed ~Three Herb Roasted Chicken

Ingredients:

7 ½ pound chicken

Stuffing:

Healthy handful of fresh basil - chopped
Healthy handful of fresh marjoram - chopped
Healthy handful of fresh sage - chopped
7 cloves of garlic – chopped
Dashes of sea salt
Dashes of fresh ground black pepper
Olive oil

Outer Rub for the Chicken:

Juice of 1 lime
Dashes of ground curry
Dashes of ground cumin
Dashes of fresh ground black pepper
Dashes of sea salt
¼ cup Olive oil

Preheat Oven 350 degrees:

Clean chicken inside and out and pat dry.

In a small bowl combine the chopped basil, marjoram, sage and garlic. Add the dashes of salt and pepper to taste and drizzle olive oil over the herbs and garlic.

Place the chicken in a baking pan and gently separate the skin from the meat. Push the garlic and herbs under the skin around the chicken breast and thighs.

For the Outer Rub:

In a small bowl combine the lime juice, curry, cumin, black pepper, sea salt and add olive oil. Rub this all over the chicken.

Place in oven for about 20 minutes per pound, until the juices run clear and the skin is a beautiful crisp golden color.

This chicken is delicious.

Fresh Garden Tomato Sauce with Grilled Button Mushrooms!!!


Ingredients:

8 garden fresh tomatoes – quartered & halved
6 cloves of garlic – crushed & chopped
Handful of fresh basil – grilled
1 quart of button mushrooms – sliced
1 sweet onion – sliced
¼ cup of red wine
Dashes of fresh ground black pepper
Dashes of sea salt
½ tsp of sugar
Fresh grated Ricotta Salada
Olive oil
Box of your favorite spaghetti

Heat a large frying pan with a drizzle of olive oil. Add the onion and garlic. Sauté until the garlic is slightly golden and the onion is clear. Add the tomatoes and simmer on low to medium.

Heat a griddle and place the sliced mushrooms on the griddle to grill. Drizzle with a little olive oil and grill until golden on both sides. Add the mushrooms to the tomatoes. Add the wine and continue to simmer on medium to low. Add the seasonings.

Place the basil on the grill and drizzle with a little olive oil. Grill for a minute and add to the sauce.

Prepare the spaghetti as directed on box.

Place the spaghetti on a serving platter. Drizzle a little olive oil and grate Ricotta Salada cheese on the spaghetti. Top with the tomato sauce and more grated Ricotta Salada cheese.

This dish is easy to prepare and the taste is that of a gourmet restaurant! Serve with a colorful side salad and some Italian bread.

Grilled Cod Fish Filet with Creamy Tomato Sauce!!!

Ingredients:

3 lbs. cod fish filet
Fresh Italian bread crumbs

Cod Fish Rub:

Drizzle of olive oil
Dashes of ground cumin
Dashes of chili powder
Dashes of curry powder
Dashes of turmeric

For the Creamy Tomato Sauce:

2 vines ripe tomatoes – sliced
¼ cup of instant potato buds
¼ cup of milk
¼ cup of water with a teaspoon of instant chicken broth (such as Vegeta)
Handful of fresh basil leaves
Olive oil
Fresh Romano cheese for grating

For the fish:

Heat a griddle.

Combine all of the ingredients for the fish rub in a small bowl and mix. Rub each cod filet with the rub on both sides and then pat each side with the bread crumbs and place on the hot griddle. Grill each side until slightly firm about 3-4 minutes on each side. Turning only once so that you do not break the fish up into pieces.

For the sauce:

Heat a large frying pan with a drizzle of olive oil and place the tomatoes in the pan. Add the basil and sauté the tomatoes until soft. Mix the milk with the instant potatoes and add to the sautéed tomatoes. Mix the water and the instant chicken broth and add to the pan. Continue to simmer on low for a minute or two.

Plate the fish and top with the creamy sauce down the middle. Grate fresh Romano cheese over the sauce and serve.

This is light and delicious!!

Grilled Chicken with Fresh Garden Tomatoes!!!



Ingredients:


2 ½ lbs. of boneless chicken breast – sliced
4 tablespoons of butter – softened
Dashes of salt
Dashes of fresh ground black pepper
Drizzle of Olive oil
Bunch of fresh basil
4 vine ripe tomatoes sliced
Fresh grated Romano cheese


In a bowl combine the sliced chicken and the butter, drizzle of olive oil and seasonings and toss.


Heat a large frying pan with a drizzle of olive oil and place the chicken breast in the heated pan to sauté.


Heat a griddle with a drizzle of olive oil and place the tomatoes on to grill. Add the fresh basil to crisp and top with the grilled tomatoes and basil.


This is easy, delicious and pretty.

Grilled Basil & Garlic Chicken Strips with Fettuccine!!!


Ingredients:

3 lbs. boneless chicken breast – sliced

Marinade:

Juice of 1 lemon
1 bunch of fresh basil – ripped
4 cloves of garlic – sliced
1 cup of chicken broth – (I used Vegeta)
Dashes of sea salt
Dashes of fresh ground black pepper
Drizzles of Olive oil

Combine all of the ingredients for the marinade and place the sliced chicken in the bowl to marinade for about 1 hour or more.

Heat a griddle with a drizzle of olive oil and place the chicken strips to grill, turning only once.

This is delicious!

For the Fettuccine:

Ingredients:

1 cup milk
½ cup sour cream
½ cup chicken broth
2 bunches of scallions – chopped
5 cloves of garlic – chopped
1 bunch of basil – ripped
1 tablespoon of butter
Dashes of sea salt
Dashes of fresh ground black pepper
Olive oil – for drizzling
Freshly Grated Romano cheese
One lb. of your favorite fettuccine

In a saucepan heat a drizzle of olive oil and the tablespoon of butter. Add the scallions and the garlic to sauté until the garlic is slightly golden.

In a food processor combine the milk, sour cream and the cup of chicken. Add to the sautéed garlic and heat on low. Do Not Simmer!
Prepare the fettuccine as directed, drain and plate in a serving platter. Top with the sauce and grate fresh Romano cheese on top and tear the fresh basil over the fettuccine. Top with the basil chicken.

This is a fresh and delicious meal.

Grilled Sage and Basil - Chicken Salad!

Ingredients:


2 lbs. cooked - boneless chicken breast – diced


For the Salad:


2 Compari tomatoes (or vine ripe tomatoes) – diced
Healthy handful of fresh sage leaves
Healthy handful of fresh basil leaves
6 cloves of garlic – crushed
Tblspn of capers – plus a tblspn of the caper marinade
3 slices of marinated red peppers– plus, 2 tblspns of the marinade
Dashes of sea salt
Dashes of fresh ground black pepper
Juice of ½ lemon
Drizzle of olive oil


Heat a griddle with a drizzle of olive oil and place the crushed garlic to get a little golden color. Add the fresh sage leaves and the basil leaves to crisp up a little.


Place the diced chicken in a bowl add the crisp basil and sage and the golden garlic. Add the slices of marinated peppers, plus a little of the marinade. Add the capers, plus the caper marinade. Drizzle the olive oil and add the lemon juice, plus the salt and pepper to taste.


This is a simple chicken salad which goes great with a good piece of Italian bread.
