A Strawberry Tart for my mother


It may not yet be official on the calendars, but in our home, the word is out- Spring is finally upon us.

Overnight spring had sprung, with bouquets of wildflowers and tea roses adorning the home, each room, more abundant than the next. Spring had a reason for coming early. A little birdie whispered sweetly in Mother Nature’s ear that a very special someone had a very special birthday! ;) And as if Mother Nature was sending her own birthday surprise, brilliant sunlight poured down from the beautiful clear skies above. It was a perfect morning, a perfect afternoon, and subsequently, an absolutely stellar evening.

It seemed like the day only got better as the hours passed by, as it should be. Paper lanterns and twinkling lights hung everywhere. The family gathered in the kitchen where we took part in preparing a delicious birthday feast to classics like Alberta Hunter, Louis Armstrong and Scott Joplin. It was a night of utter perfection that I only wish had lasted longer than it did.

Beautiful memories were made that shall be carried in our hearts for years to come. I will always cherish the evenings spent with my family, laughing together on end, sipping coffee late at night, and sharing slices of this Strawberry Tart.

All that is left to say is, Happy Birthday Mom! I love you more than words could ever properly express, and cherish every day I am blessed to spend with you. 

 Now, shall we bake?!!


Strawberry Tart
(Adapted from Reader’s Digest: Creative Cooking)

Prep Time: 30 minutes
Cook Time: 15-20 minutes

For tart you will need:
1 cup AP flour
6 tablespoons unsalted butter, cut into small pieces
1 tablespoon water
1 egg yolk
4 tablespoons confectioner’s sugar
1 teaspoon vanilla extract
½ teaspoon orange zest
1 cup cherry preserves
2 pints fresh strawberries
1 cup whipping cream

Preheat oven to 350 degrees F.

Sift flour onto a board or into a bowl. Make a well in the center. Add the butter, water, egg yolk, sugar, vanilla, and orange zest. Work the ingredients in the center, drawing in the flour until the dough is smooth.

Pat out the dough onto the bottom and sides of a pie plate. Prick the bottom and sides of the dough with a fork. Bake got 15-20 minutes, or until the pastry is light golden. Cool.

To make the glaze, put the cherry preserves in a small saucepan and melt it slowly over low heat. Cool slightly and brush over the bottom of the pastry.

Wash, hull and slice the strawberries. Fill the pie plate with the strawberries and top with remaining cherry glaze.

Whip cream with 1 tablespoon of confectioner’s sugar until light and fluffy and serve with a slice of strawberry tart! Enjoy!

Sour Cream Cake!!!


Adapted from: The Joy of Cooking

Ingredients:

1 ¾ cups cake flour
¼ tsp baking soda
1 ¾ tsps Double-acting baking powder
1/3 cup butter
1 cup sifted sugar
2 egg yolks
1 tsp vanilla
2/3 cup yogurt or 1 cup cultured sour cream
2 egg whites

Preheat Oven 350 degrees:

Sift the cake flour.

Resift the flour with the baking soda and baking powder.

Cream the butter until soft. Beat in the egg yolks and vanilla.

Add the sifted flour mixture to the butter mixture in 3 parts, alternating with: the yogurt or sour cream. Stir the batter after each addition until smooth.

Whip until – stiff, but not dry: the egg whites. Fold them lightly into the batter.

Bake in buttered pan about 25-30 minutes or until the toothpick test comes out clean.

The topping is your choice. This cake has grated Ferrero Rocher candy on top.

This cake is light and fluffy and perfect with a good cup of coffee.

Pear & Prune Pie

There is something timeless about pie.  Maybe it is the soft, flaky crust or the naturally sweet fruit...or perhaps it is the aromatic scent that fills the house while crisping in the oven! Fruit pie never goes out of style and it’s a dessert that is always in season.
With that said, enjoy this classic recipe from James Beard’s American Cookery.

Pear & Prune Pie
(Adapted from James Beard's American Cookery)

Prep Time: 15 minutes
Inactive Prep Time: 30 minutes – overnight
Cook Time 30-40 minutes

For pie crust you will need:
1½ cups AP flour, sifted
¾ teaspoon salt
½ cup shortening
1/3 cup butter
3 tablespoons butter

For pear & prune filling you will need:
4 cups peeled and sliced pears 
½ cup chopped dried pitted prunes
½ teaspoon fresh grated ginger
½ cup unsalted butter
1¼ cups brown sugar
¾ cup AP flour
Dash of cinnamon

1 cup of whipping cream
1 tablespoon confectioner’s sugar

Preheat oven to 350 degrees.

FOR THE PIE CRUST process all ingredients for the shell in a food processor, until a soft, fine dough forms. Chill for at least 30 minutes before rolling out and fitting into a 9-inch pie plate.

FOR PEAR & PRUNE FILLING mix pears, prunes and grated ginger in a bowl. Set aside.
Melt butter in a saucepan. Remove from heat and stir in brown sugar, flour, and cinnamon. The mixture may be very smooth.

Pour the fruit into the unbaked pie shell. Take the butter and sugar mixture and scatter pieces over the fruit. Bake pie for 30-40 minutes or until the topping is crusty and the fruit is tender. Transfer to a cooling rack.

In a bowl, whip cream and sugar. Serve with pie and enjoy!!!

Dynamic Duo: Bakery Style Chocolate Chip Cookies


For cookies you will need:

½ cup unsalted butter, room temperature
¾ cup white sugar
1 tablespoon of orange zest
1 teaspoon vanilla extract
1 egg
1½ cups AP flour
¼ teaspoons baking soda
¼ cup chopped walnuts
¼ cup craisins
¼ cup dark chocolate chip cookies

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.

In bowl of electric mixer, cream butter and sugar. Add orange zest, vanilla, and egg. Beat until well combined. The mixture may look curdled. Set aside.

In a large bowl sift flour and baking soda. Add flour mixture to the butter mixture and mix until a soft dough forms. Add walnuts, craisins, and chocolate chip cookies.
Shape a tablespoon worth of cookie dough on baking sheets, leaving about an inch and a half of space for the cookies to expand.

Bake for 8-10 minutes. Remove from the oven and place on a wire rack to let cool.

With their buttery crisp texture, these cookies are a perfect balance of chocolaty sweetness and citrusy tang!

New York-Style Crumb Cake

Hello Living the Gourmet readers!!! I am so pleased to be back this week and sharing with you a recipe for New York-Style crumb cake.

There are many recipes I’ve been excited to try in the Best of the Best Cookbook Recipes by Food & Wine, and this cake was at the top of my list!

New York-Style crumb cake is not to be confused with coffee cake warns Matt Lewis & Renato Poliafito, the authors of this recipe. There are three 'New York Crumb Commandments' to making this cake. Their crumb cake has a buttery crumb topping that is in obscenely large proportion to the cake. Secondly, there are no nuts- crushed or whole. And lastly, no swirls.  

The cake is moist, and I guarantee you’ll be licking your plate clean as to make sure not a single crumb is left behind. Try it & Love it.

New York-Style Crumb Cake
(From Best of the Best Cookbook Recipes by Food & Wine)

For the crumb topping you will need:

1 cup firmly packed dark brown sugar
½ cup granulated sugar
2 dashes of cinnamon
1 cup unsalted butter, melted and warm
2½ cups AP flour

For the cake you will need:

2½ cups AP flour
¾ teaspoon baking powder
1 teaspoon baking soda
12 tablespoons unsalted butter, at room temperature
1½ cups granulated sugar
2 large eggs
1¼ cup sour cream
1 teaspoon pure vanilla extract

Preheat oven to 350 degrees F. Butter the sides and bottom of a glass 9-by-13-inch pan. You can use a metal pan, but the edges of the cake may turn crispy (although that is not traditional, it is not an altogether bad thing).

MAKE THE CRUMB TOPPING In a medium bowl, stir together both sugars and cinnamon. Add the melted butter and whisk until combined. Fold in the flour until it is absorbed and set the mixture aside.

MAKE THE CAKE Sift the flour, baking powder, and baking soda together in a medium bowl. Set aside.

In the bowl of a standing mixer fitted with the paddle attachment, cream the butter until it is completely smooth and ribbonlike. Scrape down the bowl and add the sugar. Beat the mixture until it starts to look fluffy.

Add the eggs, one at a time, and beat until incorporated. Scrape down the sides of the bowl and mix again for 30 seconds. Add the sour cream and vanilla and finally add the dry ingredients in three parts, beating until well incorporated.

ASSEMBLE THE CAKE Pour the batter into the prepared pan. Use your hands to scoop up a handful of the topping and make a fist. The topping should hold together. Break off in chunks and drop them over the cake. Repeat to use all the topping. Remember, the topping layer will look outrageously thick.

Bake the cake for 45 minutes, or until the cake tester comes out clean. Rotate the pan two times during the baking process. Cool the entire pan on a wire rack for about 30 minutes before serving.

*NOTE- The cake will last for 3 days, tightly covered, at room temperature.

Winter Blues Remedy


When my mom isn't cooking, blogging, cleaning, or working, I’m certain she is a superhero. 
This was something I was always suspicious of when I was younger, but never entirely sure of- until now.
Nothing. I mean, NOTHING can stop her. She’s invincible. Yup, she’s a super mom. :)

I say this because Mom came down with an awful cold this week. She’s been fighting with the sniffles and the sneezes…and yet she hasn't missed a beat. Although, I don’t think I really need to explain all this to you. I’m sure you can tell just by trying to keep up with all the good food that’s been posted here daily.

But by my orders, today I’m taking over the blog…and the kitchen. So, as I take the next few days to play ‘mommy’, Lady Gourmet is all wrapped up with a warm cup of tea and one of these sweet, sticky carrot cupcakes I baked up for her.

Carrot Cupcakes
(Adapted from Reader's Digest - Creative Cooking)

Prep Time: 15 minutes
Cooking Time: 25-30 minutes

For carrot cupcakes you will need:
1 cup unsalted butter
2 cups sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 teaspoon orange zest
4 eggs
1½ cups finely grated or shredded carrots
½ cup walnuts, finely chopped
2½ cups AP flour, sifted
3 teaspoons baking powder
1/3 cup warm water

For Cream Cheese Frosting you will need:

1 8oz. package of cream cheese
1½ cups confectioner’s sugar
Juice of half an orange
Dried craisins for garnish

Preheat oven to 350 degrees and line cupcake tins. Grate carrots into a medium side bowl with a paper towel, to soak up some of the excess water. Set aside.

Cream butter and sugar until light and fluffy. Next beat in cinnamon, nutmeg sugar, and grated orange zest. Add the eggs one at a time, beating well after each addition. Then gradually stir in the carrots and nuts.

Sift together the flour and baking powder. Add dry ingredients to the carrot mixture with the warm water. Fold in the flour just until it is well moistened.

Pour the batter into the cupcake tins and bake for about 25-30 minutes, or until the cake tester comes out clean.

A few minutes after removing from the oven, loosen the cupcakes from the sides and turn out on a rack to cool.

Combine cream cheese, sugar and orange zest for frosting and generously spread over each cupcake once cupcakes have completely cooled. If desired, add a few dried craisin on top. (I have an apparent obsession with craisins, but they go really well with these cupcakes)!

Back to Basics ~ Oatmeal Craisin Cookies

I absolutely love oatmeal raisin, or in this case, craisin, cookies! This sweet treat is so easy to prepare and is an absolutely perfect accompaniment to soothing cup of tea!

Back to Basics – Oatmeal Craisins Cookies

Prep Time: 10 minutes
Cook Time: 10-12 minutes
Makes approximately 2 dozen

For Oatmeal Craisin Cookies you will need:

1½ cups AP flour
1 teaspoon baking powder
1 cup firmly packed dark brown sugar
1 stick butter, softened
2 large eggs
1 teaspoon vanilla extract
1½ cups rolled or quick-cooking oats
1 cup craisins

Preheat oven to 350 degrees. Grease 2 baking sheets or line with parchment paper. Combine the flour and baking powder in a medium bowl.

Place the brown sugar and butter in the bowl of stand mixer and beat until light and fluffy. Mix in the eggs and vanilla until smooth. Gradually add the flour mixture until thoroughly combined. Stir in oats and craisins until blended.

Drop the dough by rounded spoonfuls on the prepared baking sheets. Flatten the dough slightly with a fork. Bake until golden brown, about 10-12 minutes. Cool on baking sheets for 2 minutes then transfer to wire racks. Serve warm or at room temperature.

*These cookies will keep for 4-5 days in an airtight container.

Sour Cream Cheese Cake!!


Ingredients:

16 oz. sour cream
8 oz. cream cheese
¼ cup corn starch
1 tsp. baking powder
1 cup sugar
Zest of 1 lemon
1 tablespoon lemon juice
1 tsp. vanilla
3 eggs

In a mixing bowl combine the corn starch, baking powder and sugar. Add the sour cream, cream cheese, eggs, lemon juice, lemon zest and vanilla and mix well.

Crumb Crust:

1 ½ cups fine crumbs – such as vanilla cookies or graham crackers
6 tablespoons butter
4 tablespoons brown sugar

Preheat Oven 350 degrees:

Melt butter over low heat. Remove from heat and add the fine crumbs and sugar and blend well. Place the crumb mixture in a pie plate and press down to form.

Bake in oven for about 8 minutes. Remove from oven and let cool a few minutes before adding the batter.

When the pie crust is cooled for a few minutes add the batter.

Bake for 35-40 minutes or until toothpick test comes out clean.

Cool before serving.

This is a light a fluffy cheesecake and very delicious.

Moist & Delicious Raisin Muffins with Sticky Toffee Sauce!!!
Adapted from: King Arthur Flour

Ingredients:

Cake:

1 cup raisins
¼ cup soft butter – 2 ounces
¼ cup brown sugar
½ tsp baking powder
1 large egg
2 tablespoons dark molasses
1 tsp. vanilla extract
1 cup all-purpose flour
¼ tsp baking soda

Sauce:

½ cup brown sugar
6 tablespoons brown sugar
¾ tsp. cornstarch
¾ cup milk

Preheat Oven 350 degrees:

Butter cup-cake tins:

Bring the raisins to a quick simmer and drain.

Beat ¼ cup butter, brown sugar and baking powder until fluffy. Beat in the egg, then the molasses and vanilla. Beat in the flour.

Puree the raisins in a food processor. Add the baking soda, and stir into the batter. Pour into the prepared cup-cake tins.

Bake 18-22 minutes or until the toothpick test comes out clean. Cool before removing from tins.

Sauce: Cook the sugar and butter over medium-low heat. Carefully mix in the milk. Cook mixture whisking gently. Add the cornstarch and gently bring to a simmer to thicken. Turn off heat, cover and let stand to cool down.

Drizzle over the cooled muffins.

These are absolutely delicious for dessert or a treat for breakfast!

Pears in Red Wine!!!



Pears in Red Wine
(From James Beard’s American Cookery)

6 pears
1 pint port or sherry
1 cup sugar
3 slices lemon
3 slices orange

Peel the pears and core with a small bowl cutter or paring knife, leaving them whole with the stem intact. Combine the wine and sugar, bring to a boil, and simmer 5 minutes. Add the pears and the lemon and orange slices, and reduce the heat to the barest ebullition. Poach until the fruit is just tender. It may take 1 to 1½ hours. Cool in the sauce, and serve very cool.

This is a wonderful and delicious treat for any season and occasion!

Holiday Apple Pie

Holiday Apple Pie
(Adapted from Bon Appetite Magazine November 2011)

Serves 8
Prep Time: 15 minutes
Inactive Prep Time: 2 hours – overnight
Cook Time: 2 hours

For crust you will need:
3 cups AP flour plus more for surface
1 Tbsp. sugar
1½ tsp. kosher salt
½ cup unsalted butter, chilled and cut into cubes
½ cup vegetable shortening
1/3 cup ice water (or more if need)

For apple filling you will need:
3 lbs tart, crisp apples, peeled, quartered, cored, thinly sliced.
½ cup white sugar
¼ cup dark brown sugar
1 tsp. cinnamon
½ tsp. nutmeg
2 tbsp. AP flour
2-3 tbsp. unsalted butter

CRUST
Pulse flour, sugar, and salt in a food processor. Add butter and shortening; pulse until coarse meal forms. Add 1/3 cup ice water; pulse until dough forms clumps, adding more ice water by teaspoons if necessary. Gather dough into a ball; divide in half. Flatten into disks, wrap in plastic, and chill for at least 1 hour or overnight. NOTE: dough may keep for up to 2 days refrigerated.

Roll out 1 dough disk on a lightly floured surface and transfer to a prepared pie dish. Press gently onto bottom and up sides leaving no overhang. Freeze until firm, about ten minutes. Add scraps to remaining dough and roll out on parchment paper. Slide paper onto a rimless baking sheet and return to refrigerator.

Preheat oven to 350 degrees F. Line dough in pie dish with parchment paper or tin foil, and fill with pie weights. Bake until edges are just beginning to turn golden, 25 minutes. Remove foil and weights, and return to oven. Let bake for about 20 minutes longer, until crust is dark golden all over. Transfer to wire rack and let cool completely.

APPLE FILLING
Mix apples, sugars, flour, spices, and butter in a large saucepan. Stir to coat. Cook over medium heat-low heat, stirring often, until juices have thickened, about 30 minutes. Let mixture cool to room temp.
Preheat oven to 350 degrees F. Transfer fruit to crust. Remove remaining dough from refrigerator. Using a decorative cutter, make a pattern in the center of dough; reserve cutouts. Invert dough over pie. Trim dough along edge of crust, leaving no overhang. Arrange reserved dough cutouts decoratively over top crust. Place pie on a baking sheet and bake until crust is golden brown and juices bubble, approximately 45 minutes. Transfer to wire rack and let cool completely before serving. Try it & Love it.

Dark Chocolate Heart Cake!!!


Ingredients for Dark Chocolate Heart Cake:

1 cup sifted flour
1/3 cup cocoa powder
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1 1/2 sticks unsalted butter, room temperature
1 cup sugar
1/3 cup dark brown sugar, packed
1 TB vanilla extract
3 large eggs
1/2 cup buttermilk
1 1/2 cup dark chocolate chips,
specifically, Ghirardelli 60% Cacao Bittersweet

Heat oven to 350 degrees.
Butter a 9-inch diameter cake pan.
Line bottom with parchment paper.
Butter and cocoa parchment and pan.


Whisk first 5 ingredients.
Beat butter in a large bowl until light and fluffy.
Gradually beat in sugars, then vanilla.
Add in eggs, one at a time,
beating well after each addition.
Beat in dry ingredients alternatively
with buttermilk in 2 additions each.

Fold in chocolate chips.
Pour batter in prepared pan
and bake 45-50 minutes,
or until a tester comes out clean.

For the process:

When I'm baking a chocolate cake, instead of buttering and flouring the pans,
I butter and cocoa my pans. Mix the sifted flour, cocoa powder, salt, baking powder, and baking soda. Softened butter into the mixer. Beat butter until light and fluffy, then gradually add in sugar, brown sugar, vanilla and eggs.

Alternatively, add in dry ingredients and buttermilk, in two additions each beating well after each addition. Fold in dark chocolate chips. Pour into buttered and cocoa'd pan and bake at 350 degrees for about 45-50 minutes. Let cool. Invert on rack and peel off parchment.
Let cool completely before slicing horizontally in half and spreading on the dark chocolate filling.



For Chocolate Ganache:
1 cup semisweet


chocolate
2 tablespoons light cream
¼ cup milk

In a double boiler, melt chocolate with cream and milk until thick smooth. Drizzle over cake and let cool.

Red Velvet Cake


Red Velvet Cake
Adapted from James Beard’s American Cookery

For red velvet cake you will need:
½ cup unsalted butter
1½ cups sugar
2 eggs
½ teaspoon ground cinnamon
1 teaspoon vanilla
3 tablespoons cocoa
1 teaspoon red coloring
2 tablespoons water
2½ cups sifted cake flour
1½ tsp. baking powder
1 cup buttermilk (or 1 tablespoon vinegar combined with 1 cup sweet milk)
1 teaspoon baking soda
1 tablespoon vinegar

For cream cheese frosting you will need:
1 8oz. package of cream cheese
1 cup confectioner’s sugar
1 teaspoon vanilla extract

Cream the butter, and cream in the sugar until very light. Beat in the eggs, one at a time, then the cinnamon and vanilla. Mix the cocoa, red coloring, and water, and add to the creamed mixture.

Sift the flour with the baking powder and add alternately with the milk. Blend well. If using an electric mixer, turn to lowest speed when adding flour and buttermilk.

Dissolve the baking soda in the vinegar and fold into the cake batter very carefully. Turn into two prepared cake pans.

Place in a preheated oven at 350 degrees F. Bake for about 25-30 minutes or until the cake springs back when pressed lightly in the center. Let cakes cool on a rack for several minutes. In the meantime, combine all ingredients for cream cheese frosting, and frost cakes.

Serve & Enjoy!

Banana Bundt Cake!!


Ingredients:

2 ½ cups flour – sifted
4 ripe bananas
4 egg yolks
½ cup milk
1 tablespoon vanilla
1 ½ tsp. baking powder
1 cup sugar
½ cup butter

Topping:

Chocolate chips
Instant coffee
Brown sugar

Preheat Oven 350 degrees:

Cream the butter, sugar and bananas in a mixer until smooth and creamy.

Add the eggs, milk and vanilla and continue to cream.

Add the flour and baking powder and mix until smooth and creamy.

Place in a buttered bundt pan.

Top the cake with chocolate chips, brown sugar and instant coffee.

Bake about 30-35 minutes or until toothpick comes out clean.

This is a delicious cake and a great way to make use of those ripe bananas!!

The Dynamic Duo - Pumpkin Cheesecake Squares

Pumpkin Cheesecake Squares
Adapted from Betty Crocker

Prep Time: 20 minutes
Cook Time: 20-25 minutes

For crust you will need:

1 package graham crackers
5 tablespoons unsalted butter, melted
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
¼ cup white sugar

For pumpkin cheesecake you will need:

1 package (8 oz) cream cheese, softened
¾ cup sugar
1 can (15 oz) pumpkin (not pumpkin pie mix)
1½ teaspoons ground cinnamon
1 teaspoon ground ginger
3 eggs

For cream cheese icing you will need:

1 package (8 0z) cream cheese, softened
1 teaspoon vanilla extract
¼ cup white sugar
Juice of half an orange

Heat oven to 350 degrees F and prepare baking pan. In food processor, combine all ingredients for crust and blend until a fine crumb mixture has formed. Press to bottom of baking pan and bake for 15 minutes.

Using a stand mixer combine all ingredients for pumpkin cheesecake on medium speed. Pour over hot base and bake for 20-25 minutes, or until set and dry in center. Let cool completely.

In stand mixer combine ingredients needed for icing and blend until smooth. Gently spread over pumpkin cheesecake. Cut into even squares and serve. Store covered in refrigerator.

1-2-3-4 Cake!!

Inspired by ~ James Beard’s ~ American Cookery

Ingredients:

½ cup butter
1 cup sugar
2 eggs
1½ cup sifted flour
2 tsps baking powder
½ cup milk
1 tsp vanilla
Your favorite jam
Brown sugar

Preheat Oven 350 degrees:

Cream the butter and cream in the sugar until fluffy. Separate the eggs, blend the beaten yolks into the butter mixture. Beat the egg whites and add to the butter mixture. Combine the milk with the vanilla and add to the butter mixture. Sift the flour with the baking powder and add to the butter mixture on low. Mix the batter until smooth and creamy.

Butter a bunt pan. Spoon brown sugar around the bottom, spoon your favorite jam over the brown sugar and finally spoon more brown sugar over the jam.

Spread the batter evenly over the jam and brown sugar mixture.

Bake about 35 minutes or until the toothpick test comes out clean.

Almond Shortbread Cookies!!!

Inspired by: James Beard’s American Cookery


Ingredients:


2 cups butter
½ cup ground almonds
1 cup powdered or granulated sugar
4 cups sifted all-purpose flour


Cream the butter until almost like whipped cream. Gradually cream in the sugar and continue beating until very light. Stir in the flour, then turn onto a lightly floured board or counter. Knead the mixture until it is very smooth. Traditionally this is pressed into shallow pie pans, the dough being about ½ inch thick. The edges are fluted as on a pie crust, and serving portions are stippled across the dough with a fork so that the shortbread can be broken easily into small pieces.


Preheat the Oven 350 degrees:


The length of time will depend upon the thickness of the dough and the size of the pan used. Allow to become golden on the edges and slightly golden in the middle.


This is a delicious cookie for coffee or tea.

Almond Shortbread Cookies!!!

Apple Tart!!!

Inspired by: Food and Wine Annual Cookbook


Ingredients:


4 medium to large apples – peeled & sliced
Zest of 1 lemon – plus juice of ½ lemon
½ cup sugar
1 inch piece fresh ginger – grated
2 tablespoons raisins
1 egg white
2 tablespoons of chopped almonds plus 2 tablespoons sugar – for dusting


Standard Pastry Crust:


2 cups all-purpose flour
4 tablespoons lard or Crisco – all-vegetable shortening
4 tablespoons unsalted butter
3-4 tablespoons cold water


Sift the flour into a bowl. Rub the flour using your fingers until the mixture resembles fine bread crumbs. Gradually add the water. Mix the dough lightly. Gather and form into a ball. Don’t knead the dough. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.


Roll the pastry out, using short light strokes.


Preheat Oven 350 degrees:


In a bowl combine the sliced apples plus the lemon zest, lemon juice, sugar and raisins. Toss this all together.


Roll out dough to a large circle and arrange the apples in the center of the circle. Do not add the juice from the bottom of the bowl. Fold the edge of the dough over the apples. Overlap the dough where needed and pinch the dough together. Brush the rim with the egg white and sprinkle with the almond and sugar combination.


Carefully place on a non-stick cookie sheet.


Bake about 50-55 minutes or until the crust is golden and the apples are tender.


Remove from cookie sheet to a rack or plate to cool.


This is such a pretty presentation and so delicious!!

Fresh Peach Pie



Inspired by: James Beard’s American Cookery


Ingredients:


4or 5 cups of fresh fruit
2 tablespoons lemon juice
¾ cup sugar
4 tablespoons flour
2 tablespoons butter
Pastry for 2 crust pie


Peel, pit and slice peaches about ½ inch thick. Place peaches in bowl, add the lemon juice. Combine the flour with the sugar. Add the butter and toss.


Pastry for Two-Crust Pie:
(9 inch)


2 cups sifted flour
2/3 cups shortening or 1/3 cup buyer and ½ cup vegetable shortening
¼ cup cold water, approximately


Sift the flour. Stir together with a fork. Add the butter and shortening and cut it through the flour with a fork: or rub between the fingers until the mixture is in pieces about the size of a pea. Add water a few drops at a time and toss the mixture with a fork to combine the water evenly. The dough should not be wet, but just moistened enough to hold together in a ball. Chill the dough in the refrigerator 15 to 30 minutes if it seems too soft.


Take out slightly more than half of the dough for the under crust or, if you want a thinner top crust, take nearly two thirds for the under crust. Roll it out, fit it into the pie pan, and trim the edge. Roll out the upper crust. Fill the lower crust, moisten the edge, place the top crust on, cut steam vents, and trim and crimp the edges.


Pre-heat Oven 350 degrees:.


Bake the pie for about 45-50 minutes, until the crust becomes a beautiful color.


This is a delicious seasonal pie. Serve with fresh whip cream, ice cream or just as it is!

Fresh Peach PieFresh Peach Pie

Easy & Delish! ~ Apple Crumble!

Ingredients:


Filling:


3 apples – sliced
Zest of 1 lemon
Dash of ground cloves
½ cup of sugar


Topping:


1 cup of flour
½ cup of sugar
½ cup of brown sugar
¾ stick of butter


Preheat Oven 350 degrees:


Combine sliced apples, lemon zest, dash of ground cloves and sugar in a bowl and toss. Place in a deep dish buttered baking dish.


In a smaller bowl combine the flour, sugar, brown sugar and butter. Mix this together with your fingers until it becomes crumbly. Place this mixture on top of the apples.


Bake about 40-45 minutes, until the topping gets a little golden color.


This is a delicious and easy dessert to prepare, and a great compliment to a good cup of coffee!
